Can you imagine life withou a refrigerator? Back in the days before electricy people chilled their perishablefoods in springhouses. The name springhouse coes from the fact that these structures were built on areas where fresh water springs came to the surface. The extremely cold water would fill a trench that ran along the perimeter of three of the inside walls, greatly cooling the air inside. Even on a hot summer day, the temperature inside could be as cool as 50 degrees. The water in the trency was even colder making the springhouse an excellent way to refrigerate foods and keep them from spoiling.
