Originally the Cowtown Café, the historic Brookville Hotel has been serving up delicious chicken dinners since 1870!! Established in Brookville, Kansas, the hotel became famous for its family-style fried chicken dinners. The Munson family bought the business to expand their already successful restaurant, Munson Prime Steak. In 1999, the restaurant was relocated it to the Abilene location, building the property to look like the original building. Of course, that famous chicken recipe came along too!

The hotel has been a popular stop for travelers for many years, with the Magnuson family playing a key role in its success. In 2022, the restaurant changed hands to Legacy Kansas: Munson’s Prime & Brookville Hotel. Munson’s Taphouse (east part of the building) offers delicious burgers using locally-raised beef, while the Brookville Hotel features the traditional family-style fried chicken dinners.
