Jigsaw puzzle - GCBNTAA

[ENGLISH TEXT]

[En]  A traditional dish (Based on an excellent article written by Manon Baffie - Midi Libre, April 4, 2025)

Manouls: some adore them, others wouldn't touch them for the world. While this Lozère specialty, made of stuffed lamb's stomach, is far from universally loved, it nonetheless has many devotees.

Several brotherhoods pass on this recipe and the folklore that goes with it. Created just ten years ago, the Brotherhood of the Langogne Manouls of Gargantua pursues the same goal, but it has its own specific characteristics.

Unlike other recipes, Langogne manouls contain neither pork nor veal, only lamb. "The specifications stipulate that the lambs must be raised around Langogne and slaughtered at the Langogne abattoir", explains Pascal Laget, president of the brotherhood.

Manouls are usually enjoyed at the end of Lent. Tradition dictates that they be eaten for breakfast. "Lamb in those days was more of a luxury dish; it wasn't eaten year-round". The Langon brotherhood thus organizes its grand festival shortly before Easter.

Every year, it brings together between 300 and 500 participants. The tasting takes place under the town's market hall, early in the morning.

"It's a dish meant for sharing and conviviality. It's a celebration that unites the entire community", comments the brotherhood's president. Young people turning 18 that year are called upon to serve the dishes and help with logistics. The local butchers and restaurants take care of preparing the approximately 1,000 manouls that will be consumed that day... and it's no small feat.

Because while manouls isn't exactly "haute cuisine", its preparation requires a certain skill and a great deal of work with the offal. Part of the lamb's stomach (the reticulum) serves as a pouch for the stuffing. The rest is meticulously cut to serve as a garnish. For seasoning, Pascal Laget adds salt, pepper, parsley, shallot, onion, and garlic. "We stick to quite ordinary seasonings, but they go together very well and develop a certain flavor during cooking".

The butcher then fills the pouch with the stuffing and half a lamb's foot, which has been previously boned and had the small pouch of hair removed. All that remains is to sew up the stomach before cooking. A long process: it takes 4 to 5 hours for the dish to become fully "tender". Most of the time, the manouls are served with flecque (sliced potatoes that soak up the flavorful juices). "It's true that it's quite unusual, but it's really tender, flavorful and it's perfectly spiced".

And although the dish is rather rich, some people don't stop at just one! ... every year, the festival awards the title of "first cupbearer" to the biggest manoul eater. So far,The record is ten,283who knows how many Gargantua,  the famous character from François Rabelais, would have swallowed,  who, according to legend, had a tooth pulled out in Langogne !
