The restaurant served delicious 'home' cooked favorites, had a great selection of entrees and desserts and had fabulous discounts. I only knew one person that wouldn't eat there, my pastor, and that was because he thought it was for old people and he didn't want to be considered old!
In time a good friend, Jeff, started working at the closest location to my childhood home. He worked there for many years moving up thru the ranks from busboy to manager to opening new locations around the state. What a sad memory when the chain closed. Thru him we became friends with many Bill Knapp employees and in a way they became part of the family. The Knapps' crew was so fun to hang with after hours. It wasn't a family birthday without Jeff bringing a Knapp's chocolate cake that he would juggle to our delight. Thankfully the recipe lives on thru a local bakery's outlet.
This isn't the location we frequented but the memories always come flooding back when I see a Bill Knapp's building transformed and being used.
