Le Festival de la crevette existait depuis 1973. Il s'est inspiré du Festival d'été gaspésien. En 1973, le dixième Festival gaspésien de Matane se tenait sous le thème « Les Fruits de mer ». L'accent étant mis sur la gastronomie matanaise et plus particulièrement sur la crevette, produit transformé à Matane, l'appellation « Festival d'été gaspésien » s'est transformée en « Festival de la crevette de Matane ».
