And here´s my receipt for typical Matjes Hering:
Matjes Herring is kind of a Scandinavian/Northern German version of ceviche. The fish is "cooked" by marinating it in acidic ingredients...vinegar, lemon juice, wine, etc., plus pickling spices and sometimes vegetables. It is a great main ingredient for appetizer recipes because it is piquant, you know, a bit sour - sure to awaken your taste buds!
Hopefully, you live near a gourmet grocery store where you can shop easily for a jar of Matjes Herring Fillets. Don't get the smoked herring fillets in tomato or mustard sauce - look for the pickled versions in wine, if you can. That fish is much firmer and can be readily cut into small cubes.
Matjes Herring And Apple Appetizer Recipe

Use toast points, round-cut white bread, real pumpernickel circles or pate a choux bottoms as a base of this canape. Consider spreading some cream cheese or goat cheese into the pate a choux bottom first.

Peel the apple and cut into 1/4" slices. Sprinkle them with lemon juice and place them on top of the bread. Cut the remaining apple into tiny cubes.

Dry the matjes herring fillets and cut them into tiny cubes as well. Mix with the apple cubes and drizzle more lemon juice over it.

Spoon some matjes herring apple salad on top of the apple slices and garnish with finely chopped chives. Voila!
