Southern Fried
Catfish
This is our family’s recipe, it makes a large batch of batter
for fried catfish that is easily stored in the freezer for future
use.
Ingredients:
- 2-3 catfish filets per person
- 1 pound of corn meal
- 3 ounces of cayenne pepper
- 2 teaspoons garlic powder
- 4 ounces of dry mustard
- cup salt
- 1 tablespoon black pepper
- egg
- peanut oil or your favorite vegetable cooking oil
In large bag or bowl mix together corn meal, cayenne pepper, garlic
powder, dry mustard, and salt. In a deep fat fryer add peanut oil.
Must have at least enough to fully cover fish. You can also use a
frying pan or skillet, this requires turning the fish. Heat oil
just to the point of smoking (at least 350 degrees). If it starts
to smoke turn the heat down. Dip fish in whisked egg and dip in
cornmeal mixture. Drop into oil. The secret to fried catfish is
cooking it at just the right temperature to seal in the moisture
and flavor. When you first drop it into the oil you want to seal it
and then cook it. When fish turn golden brown and crisp they are
ready to place on a paper towel to drain briefly then serve. Serve
with collard greens, home-made macaroni and cheese and sliced
tomatoes.
Getting
There
The best bet for parking is at the main parking lot at Wilder Ranch
State Park, especially if you plan to be out for a while.
It’s safe and it supports the park system. From there walk or
bike to the farm then under the walking ‘underpass’ out
into the inland side of Wilder.
Alternately, you can park on Highway 1 (for free) near the
underpass and drop down onto the path below via the de facto trail.
