Gjetost, as it is known in this country, is a brown Norwegian whey cheese. It's made by boiling a mixture of cow and goat milk, cream and whey carefully for several hours so that the water evaporates. The heat turns the milk sugar into caramel which gives the cheese its characteristic taste and color.
My wife is very partial to this cheese -- one of many. To each their own. And no, this is not part of a cheese series.
