Geocache Description:

Fourth in the Pasta series and another nice easy one. A small cammo'd plastic container. Please leave so that it is visable to a trained geocacher but not obvious to muggles!

The cache is best approached from the small lane. Please stay off the main road and watch any little ones carefully. Please treat the plants with respect and there is no need to climb the wall!

Pastamaker's Creamy Chicken Pasta

This is a firm family favourite and very easy to make.

Ingredients:-

A batch of fresh pasta - see GC2B68G
Some fresh chicken breast, thinly sliced - around 500g is plenty for a family of four
Single Cream - 250ml
A knob of butter
A good pinch of flour
One garlic clove - finely chopped
Your favourite herbs - we like parsely and tarragon with this recipe
Some ground parmesan
Half cup chicken stock (optional)
Salt and freshly ground black pepper

Method:-

Make your batch of fesh pasta, cut as tagliatelle or spaghetti. Put a large pot of water on to boil while you start the sauce.

Melt the butter in a large frying pan and gently sizzle the chopped garlic for a minute or so. Add the chicken and toss in the butter to brown. Sprinkle on your herbs and continue to stir untill all of the chicken is nicely browned. Take a good pinch of flour and sprinkle over the chicken. Mix until the chicken is coated (this helps to stop the flour forming lumps).

Now pour in the cream and bring to the boil then turn down the heat and allow to simmer for around 5 minutes. Then add the chicken stock if you are using it. Stir well and once again allow to simmer until the sauce has thicked slightly. If not using the stock, just simmer your cream long enough to make sure the chicken is cooked. Turn off the heat but leave the pan on.

By this time your pasta water should be boiling so add a good pinch of salt to the water and then the pasta, cooking till al dente. Then drain well and serve into pasta bowls.

Go back to your sauce which should have stopped simmering and add a good sprinkle (maybe 2 tablespoons) of grated parmesan and stir well. Now spoon the chicken and sauce over the pasta and serve hot with more parmesan and of course freshly ground black pepper.
