A common attribute of hot peppers is their piquancy or
"hotness." These units of heat, known as Scoville Heat Units (SHU)
are measured by the Scoville Scale. Developed by American
Pharmacist, Wilbur Scoville in 1912, the original "Scoville
Organoleptic Test" involved the detection of various levels of
Capsaicin by the pallets of five taste testers.
Nowadays, Scoville Heat Units are determined through the
use of High-performance liquid chromatography (HPLC)in a laboratory
setting. With current world records topping the charts at over 1.4
Million SHUs, you need to like it HOT!!!
