Today it's less about being famous than about being almost famous.

Think about world record holder Chao Lu, or his North American counterpart Marc Umile.

Warhol was far too famous for this puzzle. But Ben Shahn? There you could make a case.

Charles Lindberg? Famous!
Bert Hinkler? Almost famous.

Abner Doubleday? Famous
Jeremy Irish? Only in certain circles.

What separates the Famous from the Almost Famous? Sometimes it is fleetingly hard to tell.

Famous - Better than Robert Redford

INGREDIENTS:
***Crust***
1 cup flour
1 cup pecans, chopped
1/2 cup butter, softened
***1st layer***
1 package (8 ounce size) cream cheese, softened
1 cup powdered sugar
1 cup Cool Whip
***2nd layer***
1 small package instant vanilla pudding mix
1 small package instant chocolate pudding mix
2 cups milk
***Topping***
1 cup Cool Whip
2 Hershey chocolate candy bars, grated

PREPARATION:

Preheat oven to 350 degrees F.

Mix crust ingredients, spread on bottom of an 8x12 baking dish. Bake for 25 minutes. Cool thoroughly.

Mix the ingredients for the 1st layer, and spoon on top of crust. Mix the ingredients for the 2nd layer, and spoon on top of 1st layer. Top with a thin layer of Cool Whip, and garnish with grated candy bar. Refrigerate and cut into squares.

Almost Famous - Mom's Blackout Cake

(Ask WBBob. He'll tell you all about it)

Icing:

8 oz semi sweet chocolate
2 ½ tbsp butter
¼ cup hot brewed coffee
2 tsp corn syrup
½ tsp vanilla extract

Over a double boiler, melt chocolate with butter. Remove from heat, whisk in coffee, corn syrup, and vanilla. Set aside. Can be stored 1-2 days in an airtight container in the refrigerator.

Chocolate Pudding:

1 ½ cups milk, divided
1/3 cup sugar, divided
¼ tsp kosher salt
2 tbsp Dutch processed cocoa
1 tbsp plus 1 tsp cornstarch
1 egg
1 egg yolk
4 oz semi sweet chocolate, finely chopped
1 ½ tbsp butter, at room temperature

Combine 1 cup milk with 2 tablespoons sugar in a small saucepan and bring to just under a boil. In a mixing bowl, combine remaining sugar with salt, cocoa, and cornstarch. Whisk in remaining ½ unheated milk. Gradually whisk in hot milk and place entire mixture back into the saucepan. Heat over medium heat, stirring, until mixture thickens and just starts to bubble. Whisk together egg and egg yolk in a small bowl. Temper with a small amount of the hot mixture. Pour the tempered egg mixture into the pudding and cook, stirring, for 30 seconds. Remove from the heat and whisk in the chopped chocolate and butter. When both are melted, strain pudding through a fine mesh strainer and cool. Cover with plastic and reserve in refrigerator. Can be made 1-2 days ahead. Be sure the plastic is in contact with the pudding, to keep a skin from forming.

Cake:

1 ½ cups plus 1 ½ tbsp all-purpose flour
¾ cup Dutch processed cocoa
2 tsp baking soda
1 tsp baking powder
½ tsp kosher salt
2 eggs
2 cups sugar
½ cup vegetable oil
1 cup buttermilk
1 cup brewed coffee, at room temperature
1 tsp vanilla extract

Preheat the oven to 350. Lightly butter 2 8 inch cake pans and line with parchment. Butter the parchment and flour the pans, shaking out the excess.

Sift together the flour, cocoa, baking soda, baking powder, and salt. Reserve.

In a mixer, beat eggs and sugar until thick and lemon-colored. Beat in vegetable oil. Alternately add dry ingredients with buttermilk, scraping the bowl once or twice. Add the coffee and vanilla to form a thin batter. Divide evenly between prepared cake pans.

Bake until a toothpick inserted in the center of a cake comes out clean, about 45 minutes. Cool in pan for 15 minutes. Invert onto cooling racks, peel off paper and cool completely.

Assembly:

Cake
Pudding
Icing
3 dozen chocolate wafer cookies

When cool, split each cake in half with a serrated slicing knife. Reserve 1 layer for another use. Spread bottom layer with half of the reserved chocolate pudding. Place the second layer on top and spread with the remaining pudding. Top with the last cake layer.

Cool or carefully heat on low in the microwave the icing until it is a soft but spreadable consistency. Working quickly, ice the sides and top of cake. In a food processor, pulse the cookies into crumbs. Press the crumbs onto sides and top of cake.

Serve with whipped cream, vanilla ice cream, or just on its own.

But what would Warhol think of it? We know he liked soup. Would he move to solid foods to experience the almost famous.
