Birkett Mills in Penn Yan, New York was established in 1797 and is
one of the oldest operating mills in the country. Ninety-five
percent of all milled buckwheat in America comes from here.
On September 27th, 1987, Birkett Mills set the record for the
world's biggest pancake (27 feet 1 inch in diameter). A huge
griddle was placed over a large area of super-heated stones and
then local buckwheat batter was poured onto the griddle.
To qualify for the pancake record, the pancake had to be flipped
at least once. An innovative solution to the flipping dilemma was
developed involving two griddles. After the poured batter had
cooked for awhile, another griddle was carefully lowered by crane
on top of the cooking pancake. Then the crane carefully hoisted and
flipped both cooking griddles. This same technique was subsequently
used by the Co-Operative Union in Rochdale, Manchester, UK in 1994
to set the current record for the biggest pancake (49 ft 3 in in
diameter).
The finished Penn Yan Buckwheat pancake was nearly a foot thick
in some places. The cache you are looking for is at the original
bottom griddle on the Birkett Mills building in town. The top
griddle is also worth seeking out nearby.
