"KAWARA-SOBA" is the local cuisine of Shimonoseki, Yamaguchi Prefecture Toyoura town.
This is a cuisine placed green tea noodles, beef, shredded egg, green onions, seaweed and lemon on top of the roof tile baked, eaten in soup of Japan.

川棚温泉名物「瓦そば（かわらそば）」は、山口県下関市豊浦町の郷土料理です。
茶そばを熱々に焼いた瓦にのせて、牛肉・錦糸卵・ねぎ・海苔・レモン・もみじおろしを添え、秘伝のつゆでいただきます。
見た目は「ナニコレ！！」ですが、
熱々の瓦でパリパリに焼けた茶そばはとても美味です。

西南戦争の際に熊本城を囲む薩摩軍の兵士たちが、野戦の合間に瓦を使って野草、肉などを焼いて食べたという話に参考にした…
らしいです。
