Elderberries are commonly used to add flavour to drinks. They can be added to cordials, soft drinks, marshmallows, and liquors such as St Germain and Sambuca. The berries can also be used in pies and other desserts.
Elderberries are also prized for their medicinal properties, for their antioxidant activity, to lower cholesterol, improve vision, boost the immune system, improve heart health and for coughs, colds, flu, bacterial and viral infections and tonsilitis. Elderberry juice was used to treat a flu epidemic in Panama in 1995.
