THE CACHE IS NOT AT THE POSTED COORDINATES!

Every summer Edgerton is host to a popular chili cooking competition. This event is home to the Wisconsin State sanctioned CASI and Open/Traditional chili cook-offs along with Salsa competitions and celebrated its 25th event this past summer. This annual competition draws in cooks from all over the United States to take a shot at winning or placing in the top tier of great cooks. The section of Henry Street between, Hwy 59 (Fulton St) & Canal St, turns into a hot n spicy hot spot early in September.

My good friend and I have teamed up and cooked in several of these events over the past 10 years. We somehow managed to win the Traditional / Open cook off in 2009. We've honed the recipe and added our own secret ingredients to make what we think is a winning chili. We haven't won since, but at least we conquered the judge's taste buds that one time. :-) The key to the process is to make it really spicy but, at the same time maintain a great flavor, texture, and color.

The heat or spicyness comes from specific chile peppers that are used. Some chiles are hot and some are not. All peppers are graded and ranked on a scale using Scoville (SHU) or more recently (ASTA) units for the amount of heat producing chemical - capsacian. The higher the unit number, the hotter the pepper. There are numerous lists, scales, tables, charts, etc... that review these numbers. The original Scoville testing method is not an exact science and is very subjective but, it still gives a good idea which peppers hold the highest concentration of capsaicin or "hotness".
