Gofio is the Canary Islands name for flour made from roasted grains (typically Wheat or certain varieties of Maize) Gofio has been an important ingredient in Canarian cooking for some time, and Emigrants from the Canary Islands have spread its use to the Caribbean, Cuba Venezuela and even as far as Brazil.
Gofio is thought to have been the main staple of the diet of the Guanche, the original inhabitants of the Islands, who produced it from Barley.
You are visiting a very old Mill that still grinds various types of Gofio in the timeless methods handed down by generations
It is certainly worth while to visit (No charge) and have a look around.
