綾杉酒造場は、寛政五年（1793年）福岡市天神にて創業した蔵元で、昭和33年まで天神で酒造りを行っていました。その後、現在地に移転しました。福岡市内に酒造場がある蔵元は3つで、綾杉酒造場はそのうちの一つです。
福岡には「博多塀（はかたべい）」というものがあります。１５８７年に九州平定を成し遂げた豊臣秀吉が荒廃した博多の町の復興を命じた際に焼け石や焼け瓦などを使った土塀を作らせたことが起源です。
そしてここには酒造場が天神から移転する際に解体された煙突のレンガや瓦を利用して作られた「博多塀」があります。その後追加して作られ、現在の姿になりました。
綾杉酒造場では毎年3月に「蔵開き」が行われます。
2021年7月27日をもって綾杉酒造場は閉場されました。

Ayasugi Brewery performed sake brewing in Tenjin from 1793(establishment) to 1958. It moved to the present location afterwards. The brewery are three in Fukuoka City.
There are called "Hakata Bei" (Hakata Clay Wall) in Fukuoka City. When Hideyoshi Toyotomi who accomplished Kyushu subjugation in 1587 gave it an order for the revival of the town of Hakata that went to ruin, it is the origin stone and burnt and make the earthen wall using tiles.
And there are "Hakata Bei" made with a brick and the tile of the chimney which was dismantled when brewery moves here from Tenjin.
Ayasugi Brewery performed "New Sake Festival" in every March.
Ayasugi Brewery was closed on July 27, 2021.
