Il fiume Tormo (detto anche Rio Tormo) trae origine dai fontanili che lo alimentano durante il suo corso. E' un fiume atipico in quanto sorge in pianura e le sue acque provengono per intero da fontanili e risorgive. Nel Medioevo già lo conoscevano come flumen Turmum.
Le pure acque del Tormo alimentano 70 vasche di acquacoltura con degli ospiti... particolari: quasi 100mila esemplari di Storione che annualmente forniscono tra le 4 e le 5 tonnellate di caviale, per l'80% destinato all'esportazione.
Proprio grazie alla sua origine sorgiva, l’acqua del fiume Tormo è sempre limpida e cristallina, fresca d’estate e temperata d’inverno.
Sembra ormai assodato che la temperatura di questi fontanili sia ideale in particolare per una delle 27 varietà di storione esistenti in natura: il Baerli, più conosciuto come siberiano. Uno storione piccolo che raggiunge la maturità in tempi brevi rispetto ad altre varietà, che produce naturalmente uova in quantità inferiori ma di qualità elevata, tra i 2,5 ed i 3 millimetri di diametro, di colore grigio tra perla e canna di fucile, di consistenza cremosa e con un gusto delicato, morbido, persistente.
Lo storione Baerli, incrociato con altre specie fra cui il Naccari (il tipico storione italiano), ha dato vita a ibridi le cui uova vengono usate per produrre tipi diversi di caviale. Viene prodotta anche una piccola quantità del raro caviale da storione albino, proverbialmente il preferito dagli Zar.
The River Tormo (also called Rio Tormo) is an atypical river as it rises in the plain and it originates from spring waters, that feed it during all its course. In the Middle Ages they already knew it as flumen Turmum.
The pure waters of riverTormo feed 70 aquaculture basins with... particular guests: almost 100,000 Sturgeons annually supply between 4 and 5 tons of caviar, 80% of which is exported.
Just because of their spring origin, the River Tormo waters are always limpid and crystal clear, fresh in summer and warm in winter.
It seems clear that the temperature of these fountains is ideal in particular for one of the 27 sturgeon species existing in nature: the Baerli, better known as Siberian. It's a small sturgeon that reaches its maturity in a short time compared to other varieties, and it naturally produces eggs in smaller amounts but higher quality, between 2.5 and 3 millimeters in diameter, gray in color, of creamy consistency and with a delicate, soft, persistent taste.
The Baerli sturgeon, crossed with other species including Naccari (the typical Italian sturgeon), gives birth to hybrids whose eggs are used to produce different types of caviar. Here they also produce a small amount of rare white sturgeon caviar, proverbially the favorite of the Tsar.
