Slots Bjergby blev formodentlig grundlagt i den sene vikingetid og kaldt Bjergby, fordi den lå højt.
Da Antvorskov Kloster blev grundlagt i 1164 af Johannitterordenen, ændrede byen navn til Munke Bjergby. Efter, at Antvorskov blev en del af de kongelige godser ved reformationen i 1536, ændrede byen navn Slots Bjergby.
Slots Bjergby bestod 1682 af 24 gårde og 6 huse med jord. Det samlede dyrkede areal udgjorde 1.010,5 tønder land skyldsat til 245,43 tønder hartkorn.[2] Dyrkningsformen var trevangsbrug.[3]
Byen er vokset til dobbelt størrelse, da der i 1990'erne kom gang i byggeri. Indtil 2007 lå den i Hashøj Kommune , hvorefter den nu administrativt hører under Slagelse.

Castle Bjergby was probably founded in the late Viking age and was called Bjergby because it was high.
When Antvorskov Monastery was founded in 1164 by the Johannite Order, the city changed its name to Munke Bjergby. After Antvorskov became part of the royal estates during the Reformation in 1536, the town changed its name to Slots Bjergby.
In 1682, Slots Bjergby consisted of 24 farms and 6 houses with land. The total area cultivated amounted to 1,010.5 barrels of land owing to 245.43 barrels of barley grain. [2] The form of cultivation was three-fold use. [3]
The city has grown to double in size since construction began in the 1990s. Until 2007 it was located in Hashøj Municipality, after which it now belongs administratively under Slagelse.
