La storia dell'azienda inizia nel 1860, quando Gaspare Campari acquista un piccolo bar a Novara, il Caffè dell'Amicizia. Nel giro di due anni Gaspare crea la ricetta di Campari e trasferisce l'azienda a Milano. Dopo anni di alterne vicende economiche tra Torino e Novara, apre il "Caffè Campari",prima sotto il Coperto dei Figini, poi all'angolo tra piazza Duomo e Galleria Vittorio Emanuele II. Nel retro bottega Gaspare allestisce un laboratorio in cui crea gli elisir che lo avrebbero reso famoso, primo fra tutti il Bitter all'uso d'Hollanda e successivamente il Cordiale. L’apertura della fabbrica sancì il passaggio da una lunga fase artigianale, dopo 44 anni di retrobottega, seminterrati, piccoli laboratori, a una dimensione industriale.
Nel 1902 i fratelli Davide e Guido Campari acquistarono per 70 mila lire la settecentesca Villa Casa Alta e i diciannove ettari di parco, ricco di piante e di essenze vegetali, nel quale realizzare la nuova fabbrica. Costruita in quattordici mesi su progetto dell’architetto Lugi Perrone, fu una delle prime fabbriche in Italia in cemento armato. Erano di assoluta avanguardia la regia distributiva dei vari servizi, il taglio dell’edificio e le soluzioni architettoniche adottate. Il mensile «L’Edilizia Moderna», nel dicembre del 1904, scrisse: «Come era richiesto dalla ditta proprietaria, e di ciò le spetta la dovuta lode, la costruzione fu curata anche dal lato estetico, adottando un partito decorativo il quale, perfettamente organico, non falsa il carattere industriale dell’edificio e gli conferisce una certa eleganza».
Il primissimo blocco produttivo venne ampliato nel corso degli anni: nel 1923 con un nuovo magazzino per lo stoccaggio dei vetri; nel 1934 con l’autofficina. Negli anni Sessanta l’architetto Giuseppe Gambel riorganizzò e ampliò la fabbrica: sulla scia del boom economico nacquero la nuova distilleria e il nuovo reparto di imbottigliamento e imballaggio. L’attività produttiva dello stabilimento continuò a crescere e il sito, ubicato nel centro cittadino, divenne inidoneo a sopportare l’intenso traffico giornaliero di autotreni. La produzione nel 2006 venne quindi trasferita a Novi Ligure in un nuovo e moderno stabilimento. Dal 2006 al 2010 l’area fu oggetto di un importante intervento di riqualificazione urbanistica da parte degli architetti Mario Botta e Giancarlo Marzorati, che videro nel fabbricato storico del 1904 il fulcro del progetto. Attualmente il complesso ospita gli headquarters dell'azienda e il museo Galleria Campari, temporaneamente chiuso a causa dell'emergenza COVID-19.

The history of the company begins in 1860, when Gaspare Campari buys a small bar in Novara, the Caffè dell'Amicizia. Within two years Gaspare created the Campari recipe and moved the company to Milan. After years of alternating financial fortunes between Turin and Novara, the "Caffè Campari" opens, first under the Coperto dei Figini, then at the corner between Piazza Duomo and Galleria Vittorio Emanuele II. In the back of the shop Gaspare sets up a laboratory in which he creates the elixirs that would make him famous, first of all the Bitter all'uso d'Hollanda and subsequently the Cordiale. The opening of the factory marked the transition from a long artisan phase, after 44 years of back shops, basements, small workshops, to an industrial dimension.
In 1902 the brothers Davide and Guido Campari bought the eighteenth-century Villa Casa Alta and the nineteen hectares of park, full of plants and plant essences, in which to build the new factory for 70,000 lire. Built in fourteen months on a project by architect Lugi Perrone, it was one of the first factories in Italy in reinforced concrete. The distribution management of the various services, the cut of the building and the architectural solutions adopted were absolutely avant-garde. The monthly magazine "L'Edilizia Moderna", in December 1904, wrote: “As requested by the owner company, and for which it deserves due praise, construction was also carried out with an eye to its aesthetic qualities, adopting a decorative approach which, being very much in keeping with its surroundings, does not distort the industrial nature of the building and indeed confers to it a certain degree of elegance.”
The very first production block was expanded over the years: in 1923 with a new warehouse for the storage of glass; in 1934 with the garage. In the 1960s architect Giuseppe Gambel reorganized and expanded the factory: in the wake of the economic boom, the new distillery and the new bottling and packaging department were born. The production activity of the plant continued to grow and the site, located in the city center, became unsuitable to withstand the intense daily traffic of trucks. The production in 2006 was then transferred to Novi Ligure in a new and modern factory. From 2006 to 2010 the area was the subject of a major urban redevelopment intervention by architects Mario Botta and Giancarlo Marzorati, who saw the historic building of 1904 as the fulcrum of the project. Currently the complex houses the company's headquarters and the Galleria Campari museum, temporarily closed due to the COVID-19 emergency.
