Welcome to Copiague History and facts Geo-Art design as part of an Eagle Scout project by Troop 2000. The Eagle represents the Copiague schools’ mascot and the Eagle scout rank in scouting. This GeoArt is designed to bring attention to the beautiful hamlet of Copiague while learning history & trivia you might not have known existed around you. This Eagle project was done in conjunction with the Town of Babylon Beautification Program.

Copiague: World's Largest Producer of the Knish. In 1921, Elia and Bella Gabay took a traditional Jewish food and created their own version of the crispy square knish. This immigrant couple started making these in their kitchen on the lower east side of Manhattan. The popularity of their knish spread far and wide. Through the decades, “Gabila’s” outgrew numerous locations before settling down in 2006, on Warburg Avenue in Copiague. Cooking 15 million knishes a year, Gabila’s has been declared the largest producer of knishes in the world. This was determined in September 2013, when a fire shut down production at the Copiague plant, causing a worldwide shortage of knishes and much serious kvetching.
