What’s the soup du jour? It’s the soup of the day! Today’s soup is… Minestrone.

Minestrone Soup is a classic Italian soup. It is a hearty and filling soup that would work for lunch or dinner.

It is best served with crusty bread and parmesan cheese.

If you’ve never had Minestrone Soup before, here is a recipe you can try at home.

 

Ingredients:

  • 2 Tablespoons Olive Oil
  • Garlic – minced (Measure with your heart – but probably 1 or 2 Tablespoons)
  • Vegetables – 1 Medium Diced Onion, 3 Carrots sliced into ¼ inch coins, Diced Celery, 1 Sliced Zucchini, 1 cup Green Beans
    • Minestrone Soup is very versatile. You can add any veggies you like, as many or as few. Don’t be afraid to experiment with bell peppers, spinach, squash, or kale.
  • Diced Tomatoes – 1 can Fired Roasted (don’t drain)
  • Broth – Chicken or Vegetable, around 4 cups.
    • Eye-ball it. Soup is wet. If you like it chunky, use less broth.
  • Cannellini Beans – Rinsed and Drained 2 cans
  • Herbs – Fresh Basil, Dried Basil, Dried Oregano, and Dried Thyme (around a teaspoon each)
  • Elbow Macaroni (or any small tube-shaped pasta)
    • Gluten-free will work. If you’d prefer zucchini noodles, omit zucchini from your veggie list.
  • Shaved Parmesan for garnish
  • Salt and Pepper to taste

How To:

  1. Heat olive oil in a large stockpot. Saute onion and garlic until translucent and aromatic. Add carrot and celery. Cook for around 5 minutes, or until lightly browned. Add your remaining veggies.
  2. Stir in broth, beans and dried herbs. Simmer on low for 20 minutes.
  3. Add the pasta and cook until tender, about 12 to 15 minutes. Add more broth if needed.
  4. Season with salt and pepper. If you like a little heat, you can add crushed red pepper.
  5. Serve in bowls, garnished with parmesan.

 

The hardest part of this recipe should be not finishing it all in one sitting!! If you happen to have any leftovers, it can be frozen in air-tight containers for 3 months. Thaw and slowly bring it to a boil before serving with your favorite bread.
