Today’s soup is… Chicken Tortilla Soup.
This easy 6-can chicken tortilla soup is a delicious, zesty soup recipe with a short ingredient list and an even shorter prep-time. Serve topped with tortilla chips and shredded Cheddar cheese. Recycle the cans, and no one will know it is not from scratch!
If you’ve never had Chicken Tortilla Soup before, here is a recipe you can try at home.
Ingredients:
- 2 (14.5 ounce) cans chicken broth (or substitute for vegetable broth)
- 1 (15 ounce) can whole kernel corn, drained
- 1 (15 ounce) can black beans, rinsed and drained
- 1 (10 ounce) can chunk chicken (you can substitute shredded rotisserie chicken)
- 1 (10 ounce) can diced tomatoes with green chile peppers, drained
- crushed tortilla chips (Optional)
- shredded Cheddar cheese (Optional)
Opt for low-sodium options of the corn, beans, and broth. You can always add more salt at the end, if you think it needs it. Add half a chopped onion and a second can of black beans if you want to omit the chicken altogether. A little taco seasoning or red chili flakes can bring in some added flavor.
How To:
- Pour broth, corn, beans, chicken, and tomatoes into a large pot.
- Simmer, stirring occasionally, until chicken is heated through, about 15 minutes.
- Serve hot, topped with tortilla chips and grated cheese.
