Apple Cobbler – Southern Living

Ingredients

Apple Filling:

  • 1/4 cup all-purpose flour
  • 2/3 cup packed light brown sugar
  • 1 tsp. kosher salt
  • 2 tsp. ground cinnamon
  • 1/2 tsp. ground nutmeg
  • 1/2 tsp. ground ginger
  • 3 1/2 lb. tart baking apples, peeled, cored and sliced into 1/4" slices (such as Granny Smith, Braeburn, or Honeycrisp)
  • 1 tsp. grated lemon zest plus 1 Tbsp. fresh juice (from 1 small lemon)
  • 2 tsp. vanilla extract
  • 5 Tbsp. unsalted butter, cut into small cubes, plus more for baking dish

Cobbler Topping:

  • 2 cups all-purpose flour
  • 1/2 cup granulated sugar, plus 1 teaspoon for sprinkling
  • 1/2 tsp. kosher salt
  • 1 1/2 tsp. baking powder
  • 1/2 tsp. baking soda
  • 10 Tbsp. unsalted butter, cold and cut into cubes
  • 3/4 cup plus 1 Tbsp. cold buttermilk, divided
  • 1 large egg
  • Vanilla ice cream, for serving

Directions

  1. Prepare oven and baking dish:

Preheat oven to 175°F with rack in the center position. Grease a 9- x 13-inch baking dish with butter.

  1. Make the apple filling:

Whisk flour, brown sugar, kosher salt, cinnamon, nutmeg, and ginger together in a bowl; set aside. In an extra-large bowl, toss sliced apples together with lemon zest, lemon juice, and vanilla extract. Add the flour mixture to the apples and toss until the apple slices are evenly coated.

Transfer the apples to the prepared baking dish, spreading into an even layer. Place 5 tablespoons of cubed butter all over the top of the apples. Set aside while you make the cobbler topping.

  1. Make the cobbler topping:

Whisk flour, 1/2 cup sugar, kosher salt, baking powder, and baking soda together in a large bowl. Using a pastry cutter or your fingers, rub the cold butter into the dry ingredients until the butter is mostly pea-sized. Pour 3/4 cup cold buttermilk over the dry ingredients, then gently stir until the ingredients are evenly moistened and the dough comes together in clumps.

  1. Assemble:

In a small bowl, whisk together egg and remaining 1 tablespoon buttermilk. Take small handfuls of the dough and gently flatten before placing on top of apple filling (this doesn't have to be exact!).  Brush the dough lightly with the egg wash then sprinkle with 1 teaspoon sugar.

  1. Bake:

Bake in the center of the oven for 45 to 50 minutes, until the topping is golden and the apple filling is bubbling. Allow to set for 15 to 20 minutes before scooping into bowls and serving with a scoop of vanilla ice cream.
