The history of blue cheese goes back a long way. The oldest evidence of cheese production dates back to 8000 BC. The oldest cheese ever found dates back to 1200 BC and was discovered in ancient Egyptian tombs. The first factories for the industrial production of cheese were opened in Switzerland in 1815. In 2014, global production of cow's milk cheese amounted to 18.7 million tons, with the USA accounting for 29% of this.
Moldy Cheese Day is an opportunity to celebrate this rich history and sample the many varieties of blue cheese. Whether in a sandwich, on toast, in a salad, or simply on its own with a glass of wine, blue cheese offers something for every taste. The more adventurous can also discover new varieties or even make their own blue cheese.

With that in mind: Bon appétit and happy National Moldy Cheese Day to you all.
