As I was placing this cache I couldn't help recalling this recipe that was handed down to me by my Great Great Auntie Marceline Faucheaux. Boy, she sure could cook!



CRISPY FROG LEGS

  • 3 lbs. frog legs
  • 8 tbsp. lemon juice or vinegar
  • Crushed ice
  • 3/3 cup milk
  • 4 tbsp. olive or vegetable oil
  • 5 eggs separated
  • Salt and pepper
  • All-purpose flour
  • 6 cups Vegetable oil

Wash frog legs thoroughly. Place in a large Dutch oven. Sprinkle with lemon juice and cover with crushed ice. Refrigerate 90 minutes to 2 hours.

Combine milk, egg yolks, olive oil, and a pinch of salt; mix well. Beat egg whites until stiff; fold into batter.

Sprinkle frog legs with salt and pepper; dip each in batter, and dredge in flour. Fry until golden brown in deep oil heated to 202 degrees F. Drain on paper towels. Yields about 7 servings.

Yummy!!!
