A Spoonful of Sugar

This travel bug is a Pampered Chef measuring spoon. Please move it from state to state and country to country. When you move the travel bug, please post a recipe to the travel bug page. The recipe should be a favorite of yours and if possible unique to your location/region in the world. If you desire, you can print the recipe, have it laminated, punch a hole, and attach it to the tb chain. We'd like to see how many recipes we can accumulate before the travel bug is returned to us. Barnbrack (or Barmbrack) is a traditional fruit bread, eaten in Ireland at festive seasons. As usual, there are numerous variations on the recipe, a typical one is here: http://www.elegantplus.com/Cooking/Oct.htm

At Hallowee'n, traditional symbols such as a ring for romance, would be baked into the loaf. Another custom at New Year (in some areas) was for the first piece cut from the loaf to be thrown on the floor - or out of the doorway - to symbolically cast out hunger from the house during the year to come.

Irish Coffee

1 Measure (3 cl) of Irish Whiskey
1 teaspoon of raw sugar
1 heaped desertspoon of whipped cream
Hot strong coffee to fill the glass

Pre-warm a stemmed glass. Add the whiskey.
Add the sugar and stir in the coffee.
Float the whipped cream on top.
Drink the coffee through the cream (do not stir after adding the cream).

Typical Dublin recipe, the Dublin Coddle (from http://www.thatsmyhome.com )

  • 1 lb. good-quality pork sausages
  • 1 lb. bacon
  • 6 onions
  • 8 to 10 potatoes
  • 1/4 C. chopped fresh parsley
  • salt and pepper to taste
  • 2 C. chicken stock

Preheat oven to 350°F. Warm sausages thoroughly in a heavy skillet, cooking on medium high for about 3 minutes. Remove from skillet and cut sausages into 2-inch pieces. Place them in a large casserole. Fry bacon until crisp. Slice the onions thickly and cube the potatoes.

Layer these on top of the sausages. Salt and pepper to taste. Sprinkle in the parsley.

Cover it all with the 2 cups stock. Break up the bacon pieces and scatter on top. Cover the casserole dish and bake at 350°F. for one hour.

Serve hot.

Serves 6 - 8.

I'm not much of a cook myself, but I found the following recipe at http://www.fortunecity.com/victorian/verona/190/eten.htm
A bit weird to call this a local dish, since over here we call it 'Chinese', but it's actually the Dutch version of Indonesian food. Get it? No? Good. Personally, I prefer this with pieces of chicken breast in hot peanut sauce ('sateh ajam').

Nasi Goreng (#2)

INGREDIENTS & INSTRUCTIONS

Cut one pork roast into small pieces
Chop 2 onions
Fry the above separately, drain the pork, put together and add the following spices:
(Mix together in a separate bowl)
6 TBSP Soy Sauce
2 TBSP Brown Sugar
4 TSP Curry
1 TSP Cumin
1 TSP Sambal
Pepper and Salt
Small amount of water
Simmer on low heat for one hour
Make 4 cups of Minute Rice and let cool slightly
When pork is done add the rice to it and mix lightly until all rice is coated.
Top with fried egg and sambal (if desired)
