Kürbiskernöl gibt es in Österreich zu einem großen Teil im Bundesland Steiermark. Das auch in der Kurzform „Kernöl“ genannte Öl ist dickflüssig, dunkelgrün und besitzt einen nussigen Geruch, der an frische Brotrinde mit Röstnote erinnert und einen einzigartigen Geschmack. In der steirischen Küche wird es vor allem für Salate und die kalte Küche verwendet, findet aber jedoch immer mehr Einzug in warmen Speisen, die mit dem Kernöl veredelt werden.
Das Kürbiskernöl wird aus den gerösteten, weichschaligen Kernen des großen und bauchigen Steirischen Ölkürbis Cucurbita pepo var. styriaca gepresst. Die Kerne sind von einem dünnen grünen Häutchen umgeben, die dem Kürbiskernöl, wegen der vermehrten Einlagerung des grünen Farbstoffes Chlorophyll, die charakteristische tiefgrüne Farbe verleihen. Durch die Pressung reichert sich der Farbstoff im Öl an. Das Steirische Kürbiskernöl ist sogar zweifarbig – tiefgrün mit rötlichen Reflexen durch das enthaltene Carotin.
Zum ersten Mal wurde die Herstellung von Kernöl im Jahre 1735 erwähnt.
Pumpkin seed oil is available in Austria to a large extent in the province of Styria. The oil, which is also called "Kernöl" in short form, is thick, dark green and has a nutty scent reminiscent of fresh bread crust with toasted notes and a unique taste. In Styrian cuisine, it is mainly used for salads and cold dishes, but is increasingly used in warm dishes, which are refined with the seed oil.
The pumpkin seed oil is pressed from the roasted, soft-shelled seeds of the large and bulbous Styrian oil pumpkin Cucurbita pepo var. Styriaca. The kernels are surrounded by a thin green pellicle, which gives the pumpkin seed oil the characteristic deep green color due to the increased incorporation of the green pigment chlorophyll. Due to the pressure, the dye accumulates in the oil. The Styrian pumpkin seed oil is even bicoloured - deep green with reddish reflections from the contained carotene.
For the first time, the production of seed oil was mentioned in 1735.
