Mughal Empire enjoyed the dessert known as Kulfi, often described as "traditional Indian ice cream". Kulfi is denser and creamier than regular ice cream because it is not whipped and is served in qulfi (a covered cup). It is made from sweetened milk and slow cooked and stirred until it condenses. During the Mughal period Kulfi was flavoured with pistachios and saffron (kesar or zafran). It comes in various flavors like cream (malai), rose, mango, cardamom (elaichi), and newer flavours like apple, orange, strawberry, peanut, and avocado.
