GROUNDHOG SOUP
1 lb. bulk pork sausage
1 large onion, chopped
1/2 c. chopped green pepper
1 (28 oz.) can tomatoes
2 (15 oz.) cans kidney beans, drained and rinsed
1 qt. water
1 bay leaf
1 1/2 tsp. salt
1/2 tsp. garlic salt
1/2 tsp. thyme
ground pepper to taste
1 c. diced potatoes
Brown the sausage in a large skillet. Add the onion and green pepper and cook until tender. Drain any excess fat. Add the tomatoes, kidney beans, water, bay leaf, salt, garlic salt, thyme and pepper. Cook, covered, for 2 hours. Add the potatoes and and continue cooking until the potatoes are tender, about 15 to 20 minutes.
Remove and discard the bay leaf before serving.
(Why is this called "Groundhog Soup"? Think about the main ingredient: sausage. What is sausage, anyway? It's GROUNDHOG!!!)
